Cellar Sauce


"But I'm not in the sauce making business!" Cindy keeps saying. Well she is now..

Here's how it all got started:

Back in 2005 before Covington Cellars had any white wine to sell, Cindy would stand in her tasting room pouring red wines for her guests. Cindy knew that most wine is meant to go with food and frankly, the oyster crackers just weren't cutting it. She really wanted to offer her guests a bite of something more typical of what they would be enjoying the wines with at home. Cindy says it went like this, "We had a chef we were working with and I asked her to help me develop a sauce that I could serve on something easy, like Costco meatballs". The chef came up with a sauce which was very good, but wasn't exactly what Cindy wanted, so she took the basics of the idea and began working on giving it her own personality. "It took me about a month of trying different ingredients and spices, but I finally developed a recipe that I really liked" Cindy says.

Cindy's sauce was served at every party Covington Cellars had. "People were begging me to put it in a jar, so I really didn't have much choice ~ we want to make our customers happy, don't we?". Now she just needed a name for it. " Cellar Sauce came to me instantly" she said. "I was a little worried the name was a bit too silly, so I bounced the name off my girlfriend Karin at lunch one day. She loved the idea, so that was that...and it has just taken off like a rocket".

Cindy admits she's torn between calling it a wine infused BBQ sauce or a wine finishing sauce because it's got such great diversity. It's delicious on just about anything grilled; like chicken, shrimp, pork or portabella mushrooms, and it's equally good as a condiment in/on hamburgers and hot dogs. For more sophisticated dining, Cindy suggests gently drizzling Cellar Sauce over salmon, lamb or tenderloin. For parties, put slightly warmed Cellar Sauce in a bowl or in a dip warmer and let your guests dip meatballs or mushrooms in it - you'll be a star!
